Cheese & Zaatar Manakeesh

Ingredients
3 cups flour
1 tsp salt
1 tbsp sugar
1 tbsp instant yeast
1 cup Dar Zaytoun Extra Virgin Olive Oil
1 cup warm water
1 cup zaatar
250 g akawi cheese, shredded
250 g mozzarella cheese, shredded
Preparation

Sift the flour over a large bowl. Add sugar, salt and yeast. Mix to combine.

Add cup of olive oil and 1 cup of warm water. Mix well with your hands or with a spoon until you get a soft, homogeneous mixture.

Brush the dough with olive oil, cover it with a cloth and let it rest for 2 hours.

In a small bowl, mix zaatar with cup of olive oil.

In another bowl, mix akawi and mozzarella cheese.

Divide the dough into 3-4 pieces. Roll each one on a flat surface sprinkled with flour until you form a big circle.

Using a medium size round cutter or bowl, cut the dough into a medium size circle. Repeat the process to get the desired number of pies.

Spread the olive oil and zaatar mixture on top of some pies and the cheese mixture on the others.

Bake in the preheated oven for 10 minutes. Serve.
